Mirza Ghasemi

Mirza Ghasemi is a traditional and delicious food of one of the provinces of Iran (Gilan) that has many fans because of its aroma and taste. This vegetarian food is very simple and easy to cook, and if you want to make it more majestic and nutritious, you can add walnut to it.

Ingredients:

3 eggplants
2 eggs (exclude for a vegan meal)
1 cup ground walnuts
400g tomatoes
100g butter
2 cloves garlic
3 tbsp. fried garlic
turmeric, pepper and salt: as needed

Instructions:

In the first step of cooking Mirza Ghasemi with walnuts, grill the eggplants on the grill or grill, and after the skin is completely burnt and gathered, peel it and chop it into slices.

Then put it with two cloves of garlic and a glass of water on the heat to cook well.

Fry the ground walnuts separately in some oil and add them to the cooking eggplants. The eggplants and walnuts should be dipped in oil.

Peel the tomatoes, grate and fry them in butter and add the fried garlic. Then add the spices to the cooking eggplant and walnuts. Reduce the heat until the ingredients are completely crushed.

In the last step of Mirza Ghasemi cooking, fry the eggs separately and put them on it. This step can be removed if you prefer having a vegan meal.

You can eat this meal with different kinds of bread.
